Ingredients:
• 15 oz of Skyline Chili
• 1/2 Cup chopped white onion
• 2 1/2 Cups Skyline shredded cheddar cheese
• 1 can red beans, rinsed and drained
• 8 (8 inch) flour tortillas
• 1 1/4 Cup half-and-half
• 4 large eggs
• 1/2 Teaspoon salt
• 1 Tablespoon flour
• Skyline Hot Sauce, sour cream, salsa are optional for serving
Recipe:
- If baking the same day, preheat the oven to 350 degrees
- Coat a 9×13 inch baking dish with nonstick cooking spray.
- Mix together the chili, beans, onions, and 2 Cups of the cheese in a medium bowl.
- Scoop 1/3 Cup of the chili mixture onto each tortilla. Roll up tortilla and place seam side down in the baking dish.
- Whisk together the half-and-half, eggs, salt, and flour. Pour egg mixture over tortillas.
- If making the day before, cover and refrigerate overnight.
- If baking the same day, put into oven.
- Bake, covered, for 35 minutes. Remove foil and sprinkle remaining 1/2 Cup of cheese over enchiladas. Bake uncovered for 10 more minutes or until tops are golden brown and the egg mixture is set.
- Serve with Skyline hot sauce, sour cream, salsa, or additional onions.
