Ingredients:
- 1 Box of Bow Tie pasta noodles
- 1 cup of crumbled feta cheese
- 1 cup of small pitted Kalamata olives (slice if too large)
- 1 cup of roasted red peppers
- Add a few pepperoncinis to taste
- 1 cup diced red onion
- 1 cup of chopped carrots
- ½ cup chopped fresh parsley
- 1 tbsp dried oregano
- ½ tsp crushed red pepper flakes
- Skyline Greek Salad Dressing
- Optional: Skyline Oyster Crackers
- Optional: Skyline Hot Sauce
Recipe:
Cook 1 pound of bow tie pasta noodles in a pot of salted water (about 1 teaspoon) per the instructions on the package (usually 10-12 minutes).
When Pasta is done, save 3 tbsp of pasta water in a large bowl, drain pasta and put in large bowl and with 3 tbsp of pasta water and toss.
Set aside and let cool to room temperature.
In another bowl add:
- 1 cup of crumbled Feta cheese
- 1 cup of small pitted Kalamata olives (slice if too large)
- 1 cup of roasted red peppers
- Add a few pepperoncinis to taste
- 1 cup diced red onion
- 1 cup of chopped carrots
- ½ cup chopped fresh parsley
- 1 tbsp dried oregano
- ½ tsp crushed red pepper flakes
Mix well and toss in the cooled pasta
Pour in half of a bottle of Skyline Greek Salad Dressing and mix well to taste. Can add more dressing as desired.
Yields – 6-8 side dish servings
Pro Tip – always serve with Skyline Oyster Crackers and Skyline Hot Sauce on the side OR make a cracker topping for the salad!
