Skyline Breakfast Enchiladas

Ingredients

  • 15 oz can of Skyline Chili
  • 1/2 Cup chopped white onion
  • 2 1/2 Cups Skyline shredded cheddar cheese
  • 1 can red beans, rinsed and drained
  • 8 (8 inch) flour tortillas
  • 1 1/4 cup half-and-half
  • 4 large eggs
  • 1/2 Teaspoon salt
  • 1 Tablespoon flour
  • Toppings – Skyline Hot Sauce, sour cream, salsa

Instructions

  1. Preheat the oven to 350 degrees F
  2. Coat a 9×13 inch baking dish with non-stick cooking spray
  3. Mix together the chili, beans, onions, and 2 Cups of the cheese in a medium bowl
  4. Scoop 1/3 Cup of the chili mixture onto each tortilla. Roll up tortilla and place seam side down in the baking dish
  5. Whisk together the half-and-half, eggs, salt, and flour. Pour egg mixture over tortillas
  6. Bake, covered, for 35 minutes.
  7. Remove foil and sprinkle remaining 1/2 Cup of cheese over enchiladas.
  8. Bake uncovered for 10 more minutes or until tops are golden brown and the egg mixture is set.
  9. Serve with Skyline hot sauce, sour cream, salsa, or additional onions.
