Skyline Breakfast Enchiladas

Ingredients
- 15 oz can of Skyline Chili
- 1/2 Cup chopped white onion
- 2 1/2 Cups Skyline shredded cheddar cheese
- 1 can red beans, rinsed and drained
- 8 (8 inch) flour tortillas
- 1 1/4 cup half-and-half
- 4 large eggs
- 1/2 Teaspoon salt
- 1 Tablespoon flour
- Toppings – Skyline Hot Sauce, sour cream, salsa
Instructions
- Preheat the oven to 350 degrees F
- Coat a 9×13 inch baking dish with non-stick cooking spray
- Mix together the chili, beans, onions, and 2 Cups of the cheese in a medium bowl
- Scoop 1/3 Cup of the chili mixture onto each tortilla. Roll up tortilla and place seam side down in the baking dish
- Whisk together the half-and-half, eggs, salt, and flour. Pour egg mixture over tortillas
- Bake, covered, for 35 minutes.
- Remove foil and sprinkle remaining 1/2 Cup of cheese over enchiladas.
- Bake uncovered for 10 more minutes or until tops are golden brown and the egg mixture is set.
- Serve with Skyline hot sauce, sour cream, salsa, or additional onions.
