Skyline Chili Greek Pasta Salad

Ingredients

  • 1 Box of Bow Tie pasta noodles
  • 1 cup of crumbled feta cheese
  • 1 cup of small pitted Kalamata olives, sliced
  • 1 cup of roasted red peppers
  • 3-6 pepperoncinis, sliced
  • 1 cup diced red onion
  • 1 cup of chopped carrots
  • ½ cup chopped fresh parsley
  • 1 tbsp dried oregano
  • ½ tsp crushed red pepper flakes
  • Skyline Greek Salad Dressing
  • Optional: Skyline Oyster Crackers
  • Optional: Skyline Hot Sauce

Instructions

  1. Cook 1 pound of bow tie pasta noodles in a pot of salted water (about 1 teaspoon) per the instructions on the package (usually 10-12 minutes)
  2. When pasta is done, save 3 tbsp of pasta water in a large bowl, drain pasta
  3. Put pasta in large bowl with remaining 3 tbsp of pasta water and toss
  4. Set aside and let cool to room temperature
  5. In another bowl add:
    1. 1 cup of crumbled Feta cheese
    2. 1 cup of small pitted Kalamata olives (slice if too large)
    3. 1 cup of roasted red peppers
    4. Add a few pepperoncinis to taste
    5. 1 cup diced red onion
    6. 1 cup of chopped carrots
    7. ½ cup chopped fresh parsley
    8. 1 tbsp dried oregano
    9. ½ tsp crushed red pepper flakes
  6. Mix well and toss in the cooled pasta
  7. Pour in half of a bottle of Skyline Greek Salad Dressing and mix well to taste. Add more dressing as desired.
