Skyline Chili Greek Pasta Salad

Ingredients
- 1 Box of Bow Tie pasta noodles
- 1 cup of crumbled feta cheese
- 1 cup of small pitted Kalamata olives, sliced
- 1 cup of roasted red peppers
- 3-6 pepperoncinis, sliced
- 1 cup diced red onion
- 1 cup of chopped carrots
- ½ cup chopped fresh parsley
- 1 tbsp dried oregano
- ½ tsp crushed red pepper flakes
- Skyline Greek Salad Dressing
- Optional: Skyline Oyster Crackers
- Optional: Skyline Hot Sauce
Instructions
- Cook 1 pound of bow tie pasta noodles in a pot of salted water (about 1 teaspoon) per the instructions on the package (usually 10-12 minutes)
- When pasta is done, save 3 tbsp of pasta water in a large bowl, drain pasta
- Put pasta in large bowl with remaining 3 tbsp of pasta water and toss
- Set aside and let cool to room temperature
- In another bowl add:
- 1 cup of crumbled Feta cheese
- 1 cup of small pitted Kalamata olives (slice if too large)
- 1 cup of roasted red peppers
- Add a few pepperoncinis to taste
- 1 cup diced red onion
- 1 cup of chopped carrots
- ½ cup chopped fresh parsley
- 1 tbsp dried oregano
- ½ tsp crushed red pepper flakes
- Mix well and toss in the cooled pasta
- Pour in half of a bottle of Skyline Greek Salad Dressing and mix well to taste. Add more dressing as desired.
